Since China’s local dishes have their own typical characteristics, generally, Chinese food can be roughly divided into eight regional cuisines, which has been widely accepted around the world. Shandong Cuisine Sichuan Cuisine Guangdong Cuisine Anhui Cuisine The Eight Cuisines Zhejiang Cuisine Fujian Cuisine Hunan Cuisine Jiangsu Cuisine Since there are only six girls in our group, we would only introduce six of the eight cuisines to you…… Anhui Cuisine Six of The Eight Cuisines 苏菜 Jiangsu Cuisine Do you want to have a try? Jiangsu Cuisine, also called Huaiyang Cuisine, is popular in the lower reach of the Yangtze River. Aquatics as the main ingredients, it stresses the freshness of materials. Besides, Its melon carving are delicate. The flavor of Huaiyang Cuisine is light, fresh and sweet and with delicate elegance. Jiangsu cuisine is well known for its careful selection of ingredients and its not-too-spicy, not-too-bland taste. melon carving 瓜雕 Beggar‘s Chicken 叫花鸡 Many Chinese dishes have names adapted from story. ORIGIN Once upon a time a beggar led a wandering life in poverty. One day, he was very hungry. He lucked into a chicken, but had neither tools nor condiments. He roasted it without plucking it. When it was finished, the smell spread over a long distance.And that is why we called it the beggar’s chicken. . As we all know, Sichuan Cuisine ,which has a long history, is very popular among Chinese people. It is rich in local color, and is one of the four major Chinese styles of cooking. The main character of Sichuan Cuisine is spicy. The majority of overseas Chinese people are from Guangdong , so Guangdong Cuisine is perhaps the most widely available Chinese regional cuisine outside of China. Guangdong Cuisine Long ago, Guangdong has been lacking in all support,for which Cantonese people ate what they could find locally. Wild animals, plants and even insects. In fact, people in Northern China often say that Cantonese people will eat anything that flies except airplanes, anything that moves on the ground except trains, and anything that moves in the water except boats. Guangdong Cuisine Roast suckling pig 烤乳猪 It is the most famous speciality of Cantonese food. The highly distinctive characteristic of Anhui cuisine lies not only in the elaborate(精心制作的) choices of cooking materials but also in the strict control of cooking process. Anhui Cuisine Anhui Cuisine is derived from the native cooking styles of the Huangshan Mountains region in China and is similar to Jiangsu cuisine, but with less emphasis on seafood and more on a wide variety of local herbs and vegetables. Anhui province is particularly endowed with fresh bamboo and mushroom crops. Ginger duck 姜母鸭 make you warm in winter. Huangshan stewed pigeon 黄山炖鸽 it’s combined with Huangshan pigeon and Chinese yam. Braise in soy sauce civets 红烧果子狸 can't eat with:crab contains:protein , carotene,fat Shandong Cuisine 鲁菜 A statue of Confucius in Shandong province. 1 2 One of the oldest cuisines in China, with a history of 2,500 years. Originates from Confucius family banquet, then adopted by imperial kitchen. Shandong cuisine has great influence in north China and has become the representative of North China cuisines Specializes in seafood like prawns, sea cucumber, flounder 3 4 The representative of shandong cuisine 芝麻鱼球 sesame fish balls 德州扒鸡 Dezhou Braised Chicken 五香酱肉 spiced Pork 九转大肠 Twisted Large Intestine Hunan Cuisine 湘菜 第40页 When it comes to Hunan Cuisine, What would you think about? pepper Cool hot Spicy …… Hunan is known as “a land flowing with milk and honey”. Hunan food is characterized by its hot and sour flavor, deep color, and the prominence of the main flavor in the dishes. Hunan cuisine is known for its liberal use of chilies, shallots and garlic . Its dishes tend to be dry hot or purely hot which distinguish from málà in Sichuan cuisine Background of Hunan Cuisine The representative Dong′an Chicken 东安子鸡 Dong′an Chicken ,one of the most famous Hunan dishes. ,was named by its material— the pullet .And It was handed down more than 1000 years from Tang Dynasty. As one of the traditional style dishes of Hunan Cuisine,it is made by smoked and cured pork、chicken and fish. 腊味合蒸 We just introduce the Eight Cuisines briefly.
